Honey process coffee is the result of a unique method of processing coffee cherries that lies between the washed and natural methods. After growers harvest the cherries, they remove the skin but leave some of the sticky mucilage layer intact during drying. This pulped natural coffee has a sweeter and fruitier profile, combining the bright acidity of washed coffee with the body and depth of natural coffee.
