The journey of a washed-process coffee begins at the height of ripeness. After careful hand-selection, the coffee cherries are depulped, a first step that removes the outer fruit layer. This is where the pristine water of the Andes, a gift from our mountain spirits, plays a crucial role. The beans, still covered in a sweet, sticky mucilage, are separated and prepared for the next stage. This ritual of water is a commitment to a clean and pure coffee from the very beginning.

Coffee Fermentaion

The Fermentation: A Moment of Unveiling

Following the depulping, the beans are placed in tanks of pure mountain water. Here, the process of fermentation begins, a natural step where enzymes break down the mucilage. This stage is closely monitored by our cultivators, who use their generations of wisdom to know the exact moment to end the process. This careful fermentation removes the mucilage while preserving the bean's innate qualities. It is a moment of unveiling, where the bean's true, unblemished character is revealed.

Sun Drying

The Final Sun-Kissed Drying

The journey culminates under the warm, generous gaze of Inti, the Incan sun god. The beans are carefully spread out on raised patios, where they dry slowly and evenly in the cool mountain air. This final, sun-kissed drying stage is essential for setting the bean's flavor profile. It allows the coffee to reach a perfect, stable moisture level, locking in the vibrant acidity and complex sugars that are the signature of a washed-process coffee.
