Cultivators:
HIGH MANCO is a coffee lovingly grown by Francisco Espiritu Entazu, Leopoldo Velita, Javier Soto, and Daniel Lale. Their farms are nestled in the tranquil villages of Maria Teresa, Agua Fresca, Miraflores, and Gramazu, where coffee cherries flourish at altitudes of 1600-1930 meters above sea level, bordering the breathtaking Amazonian Biosphere Reserves. Each carefully hand-picked bean, a blend of Geisha, Limani, Catimor, Pachi, Común, and Catuai, reflects the dedication found on their farms, ranging from small family plots to larger estates. The legendary spirit of Manco Cápac, representing leadership, strength, and a pioneering heart, guides these farmers. This coffee embodies the invigorating power of the mountains, creating a cup that awakens the senses and inspires a sense of wonder. It's a coffee whispered about with admiration, a truly cherished treasure.
Why Lounges Love It:
Like Manco Cápac, the first ruler and founder of the Inca civilization, emerging from the depths of Lake Titicaca, this cup promises discovery and unparalleled experience, and it is a bridge to another world. An experience I'm sure your patrons seek. An offering suited for settings where the extraordinary is savored, and conversations flow with effortless grace.
🔥 Roasting
A City+ roast is ideal to bring out the best in High Manco. This allows the vanilla and toffee notes to shine, balanced by its unique citrus acidity.
💧 Brewing
Brewing with a French press or as a cold brew can accentuate its full body and creamy texture.
Espresso Suitability: Allow the fragrance of vanilla and toffee to infuse the air as you grind. The pronounced citrus acidity, like the sun piercing through the rainforest canopy, cuts through milk with grace, while the chocolate cream finish leaves a lingering sweetness.
Nitro Cold Brew: Crafted from the high altitudes of Pasco, this washed coffee presents a silky body, ideal for nitro infusion. The inherent flavors of chocolate, vanilla, and toffee will be amplified, creating a creamy and luxurious nitro cold brew. A splash of oat milk complements the aguaymanto citrus notes for a floral finish.
These are just suggestions, and your personal preferences may vary. Experiment with different roast levels and brewing methods to discover what you enjoy most.
